Fish sauce is a very common and rural but unlackable and close-knit to
Vietnamese people in their daily life as well as their cuisine hobby.
It is the fatherland taste - the nostalgia of expatriates. You can’t talk about fish sauce without talking about Phu Quoc fish sauce. It is famous at home and abroad.
Phu Quoc fish sauce has high protein content (360-400), delicate and balanced flavour and strong smell of anchovies mixed with the special pepper that can only be found in Phu Quoc. The longer the fish sauce is stored, the more delicious it is.
At the present, Phu Quoc has around 100 fish sauce producing establishes and proximately over 10 million litres per year. Duong Dong and An Thoi are the two most fish sauce producing places in the island. There are hederitary fish sauce producing families whose reputation has remain generation to generation. The fish sauce producing establishments here are not called fish sauce houses or granaries but fish sauce bucket shops. The viscid pure fish sauce extract with clear dark brown color is used for drinking by fishermen or divers before going in the sea to keep warm. They can be drunk if overconsumed. Owners of fish sauce establishments use it to treat special guests.
